This is a super easy Pakistani-style salad that I love. It’s usually served with a variety of daal/lentils and rice as its tartness complements the flavours and warmth of the daal really well. It also goes really well on burrito bowls!
– ½ red onion (chopped finely) – ½ cucumber (chopped finely) – handful of grape tomatoes (cut into fours) – juice from half a lemon – 1 tsp white vinegar – salt & pepper. Mix all the veggies together, dress them with the lemon juice and vinegar, add a dash each of salt and pepper. Best served cold.
